Brunch Board with Bagels, Smoked Salmon and Berries

This brunch board is built to be the meal, not a snack before it. Most cheese boards lean on crackers and cured meat, which looks pretty but leaves a late-morning table hungry. This one carries bread and protein the way a brunch table would: mini bagels, smoked salmon, whipped cream cheese, granola and a pile of berries. It serves 6 and takes five steps to assemble, with no oven needed beyond the toaster. The only rule that really matters is timing. Toast the bagels at the last minute so they arrive warm. Everything else can sit out and wait while people pour the coffee.

Crunch. Six mini bagels, halved and toasted, plus 3.5 oz of granola clusters. Clusters stay crunchier than loose granola when they sit near fruit.

Fresh. 12 oz of mixed berries. Rinse and dry them well so they do not leak onto the bagels.

  • Mini bagels, halved and toasted — 6 bagels (330 g)
  • Granola clusters — 3½ oz (100 g)

Fresh

  • Mixed berries — 12 oz (340 g)

Instructions

  1. Put the whipped cream cheese in a wide shallow bowl in the center and swirl the top with the back of a spoon.
  2. Set the brie and havarti on either side, both cut into wedges so nobody waits for a knife.
  3. Drape the smoked salmon in loose folds along one edge and the prosciutto along the other.
  4. Pile the toasted bagel halves in a corner, cut side up so they can be grabbed and topped in one move.
  5. Fill the gaps with berries, granola and small bowls of jam and honey, keeping the wet things away from the bagels.

How to store, freeze and make ahead

This recipe does not give a make-ahead window for the finished board, so treat assembly as a last-minute job. You can set out the cheeses, meats and berries a little ahead and leave only the bagels to toast. Keep the salmon and prosciutto cold until you put them out, and return anything that has been sitting out too long to the fridge, covered, as leftovers. Store the cheeses, meats and fruit separately so the berries do not soften the bread and the salmon does not flavor the rest. Granola stays crisp in a sealed container.

What to serve with it

Coffee and juice are the obvious partners. Sparkling wine or a mimosa suits a weekend table. Because the board already holds bread, protein and fruit, you do not need a second dish, though a pot of tea and extra jam on the side is welcome. For a heartier spread, put out a bowl of eggs, as described below.

Set out small plates and napkins, and a spoon for each bowl, so guests can build their own bagels. Put the jam and honey bowls near the edge of the board so they are easy to reach.

Variations

  • No fish or meat. Skip the salmon and prosciutto and add 6 jammy eggs, halved, plus 150 g / 5 oz marinated tomatoes.
  • Sweeter board. Add a second jam or a bowl of yogurt for the granola.
  • Cheese swap. Replace the havarti with another mild, sliceable cheese.
  • Fruit change. Use sliced stone fruit or citrus segments in place of some of the berries when berries are out of season.
