The Holiday Showstopper Board is built for the table where one cheese plate will not do. It serves 12, sits on a 24 in (60 cm) board or a lined sheet pan, and is anchored by two warm baked brie wheels with a cheddar and a blue cheese at the far ends. Two rivers of cured meat curve between them, and cranberry sauce and honeycomb bring the sweetness. Grapes, rosemary crackers and candied pecans fill every gap. The assembly is five steps and no cooking beyond the brie itself, so most of your effort goes into placement.

Why this works

The board follows a formula of 2 warm cheeses, 2 firm cheeses, 2 crunchy items and 1 fresh fruit, with sweet accents on the side. Each part has a job.

  • Two small brie wheels beat one big one. Everyone reaches a melted center without a queue.
  • Strong cheeses sit at the ends. The cheddar and the blue stay away from the sweet toppings, so the flavors stay distinct.
  • The meats curve. Prosciutto and salami in long rivers between the cheeses look fuller than flat rows and guide the eye across the board.
  • There are no bare spots. Grapes, crackers and pecans pack the remaining space, so the board looks abundant from every angle.

A board for a crowd can easily look sparse or chaotic, and the fix is structure. Place the warm anchors first, keep strong flavors apart, and fill the rest tightly. The sweet items sit in bowls pressed into the board, which stops them from sliding and keeps the cranberry sauce from spreading over the meats and cheeses.

What to know about the ingredients

The warm cheese is 16 oz of baked brie, in two wheels. The wheels go on the board warm, so bake them close to serving time. The Classic Baked Brie in Puff Pastry is one way to prepare them.

For the firm and blue cheeses, use 12 oz of aged cheddar and 9 oz of Stilton or another blue cheese. Any blue with a firm, sliceable texture will do.

The meats are 8 oz of prosciutto and 8 oz of hard salami.

For sweetness, use 9 oz of cranberry sauce, served in a small bowl, and 5 oz of honeycomb.

The crunch is 12 oz of rosemary crackers and 7 oz of candied pecans.

The fresh element is 32 oz of red and green grapes. Using both colors adds contrast across the board.

If you want no meat, add 10.5 oz of roasted red peppers and 7 oz of marinated mushrooms instead of the meats.

  • 12 oz340 gAged cheddar
  • 9 oz250 gStilton or another blue

Meats

  • 8 oz225 gProsciutto
  • 8 oz225 gHard salami

Sweet

  • 9 oz250 gCranberry sauce
  • 5 oz150 gHoneycomb

Crunch

  • 12 oz340 gRosemary crackers
  • 7 oz200 gCandied pecans

Fresh

  • 32 oz900 gRed and green grapes

Instructions

  1. Set the two warm brie wheels in the middle of a 24 in (60 cm) board or a lined sheet pan, spaced a forearm apart.
  2. Place the cheddar and blue at the far ends so the strong cheese never touches the sweet toppings.
  3. Lay the prosciutto and salami in two long rivers that curve between the cheeses, not in flat rows.
  4. Add the bowls of cranberry sauce and honeycomb, pressing them into the board so they do not slide.
  5. Pack every remaining inch with grapes, crackers and candied pecans until nothing bare is left, and add a second knife per cheese.

Notes

  • Two small brie wheels beat one big one: everyone reaches a melted center without a queue.
  • No meat: add 300 g / 10.5 oz roasted red peppers and 200 g / 7 oz marinated mushrooms.

How to build it

  1. Place the brie first. Set the two warm wheels in the middle of the board, spaced a forearm apart.
  2. Put the strong cheeses at the ends. The cheddar goes at one end and the blue at the other.
  3. Curve the meats. Lay the prosciutto and salami in two long rivers that bend between the cheeses, not in flat rows.
  4. Press the bowls in. Add the cranberry sauce and the honeycomb, pressing them into the board so they do not slide.
  5. Pack the gaps. Fill every remaining inch with grapes, crackers and candied pecans until nothing bare is left, and add a second knife for each cheese.

Work from the center outward. The brie and the bowls are the anchors, and everything else fits around them.

A forearm of space between the wheels gives people room to cut without bumping elbows, and it leaves room for the meat rivers to curve through.

How to store, freeze and make ahead

This board is assembled for serving, so build it shortly before guests arrive. The practical plan is to arrange everything except the brie, then add the two warm wheels last, so they arrive at the table soft. If you use a sheet pan, line it first so cleanup is simple.

What to serve with it

A table this size already has plenty of food, so keep the rest light. Sparkling drinks and wine suit the sweet and salty mix. For a different seasonal angle, the Fall Harvest Board uses the same approach with autumn flavors. For a smaller gathering, the Girls Night Board serves 6.

Because the two brie wheels are warm, they set the pace of the party. Guests tend to gather around them first, so keep the knives and a few extra crackers close by, and place the wheels where several people can reach them at once.

Variations

  • Swap the cranberry sauce for another jam or chutney you like.
  • Replace the candied pecans with another candied nut.
  • Choose a different aged cheese in place of the cheddar.
  • Use the no-meat swap above for a vegetarian table.

Questions, answered.

How many people does this board serve?

It serves 12 guests as an appetizer board, so it suits a long table or a holiday party.

Why use two small brie wheels instead of one large one?

Two small wheels mean everyone reaches a melted center without a queue. The recipe uses 16 oz of baked brie in total, split into two wheels.

What size board do I need?

Use a 24 in (60 cm) board, or a lined sheet pan if you do not own one that large.

Where do the strong cheeses go?

Place the cheddar and the blue at the far ends of the board, so the strong cheese never touches the sweet toppings.

Can I make it without meat?

Yes. Add 300 g / 10.5 oz roasted red peppers and 200 g / 7 oz marinated mushrooms in place of the prosciutto and salami.
