Instructions

  1. Shred the zucchini and squeeze it dry in a clean kitchen towel until the drips stop. These are the shreds, 240 g (2 cups). Wet shreds steam the tortilla soft from the inside.
  2. Toss the shreds with the cumin and salt in a bowl.
  3. Lay a tortilla flat and cover half of it with 30 g (1/4 cup) cheddar, then 60 g (1/2 cup) of the shreds, then another 30 g (1/4 cup) cheddar. The vegetable goes between two cheese layers so it melts into place.
  4. Fold the bare half over and press it flat with your palm. Build all four the same way.
  5. Melt 5 g (1 teaspoon) of the butter in a skillet over medium heat until it foams and the foam settles, about 45 seconds.
  6. Cook one quesadilla 3 to 4 minutes per side, pressing it once with a spatula, until each side is golden with darker spots and the cheese runs at the open edge when pressed.
